Abstract. Gastronomic tourism has emerged as one of the fastestgrowing niches within the global tourism industry, driven by increasing consumer interest in authentic culinary experiences and local food cultures. This paper examines the multifaceted role of gastronomy in contemporary tourism, analyzing its economic contributions, cultural significance, and potential as a tool for sustainable destination development. Drawing on a systematic review of peer-reviewed literature and case studies from leading gastronomic destinations — including France, Italy, Japan, Peru, and Spain — this study explores the mechanisms through which food tourism generates revenue, preserves
intangible cultural heritage, and supports rural development. Findings indicate that well-structured gastronomic tourism strategies can substantially increase tourist spending, extend length of stay, and create competitive advantages for destinations. The paper further discusses emerging challenges including over-tourism, commodification of food culture, and the impact of global food trends on local culinary identity. Recommendations for destination managers and policymakers are provided to harness the full potential of gastronomic tourism within a sustainable development framework. Keywords: gastronomic tourism; food tourism; culinary heritage; sustainable tourism; destination management; cultural identity
1. Introduction. Tourism has long been recognized as a vehicle for cultural exchange, economic development, and cross-cultural dialogue. In recent decades, however, the motivations underpinning tourist behavior have diversified significantly, moving beyond the conventional sun-seasand paradigm toward more immersive and experiential forms of travel. Among these, gastronomic tourism — defined as travel motivated primarily or partially by the desire to engage with a destination's food and drink culture — has attracted considerable academic and industry attention (Hall & Sharples, 2003; Richards, 2002). Food is universally recognized as one of the most direct expressions of cultural identity. It embodies history, geography, social structures, and collective memory in ways that few other cultural artifacts can replicate. When travelers partake in local culinary traditions, they engage not only with flavors and ingredients but with the stories, rituals, and communities that give those traditions meaning. This experiential depth makes gastronomic tourism particularly compelling in an era characterized by the search for authenticity and meaningful travel experiences (Cohen & Avieli, 2004). The economic significance of gastronomic tourism is equally substantial. According to the World Food Travel Association (2023), foodmotivated travelers account for approximately 25–35% of total tourism expenditure in leading culinary destinations. Moreover, food tourism is closely linked to the development of agri-food supply chains, the revitalization of rural economies, and the preservation of traditional crafts and artisanal food production methods. These linkages position gastronomic tourism as a strategic tool for integrated destination development. Despite its growing prominence, gastronomic tourism remains under-theorized in several respects. Questions remain about the relationship between culinary authenticity and tourist expectations, the conditions under which food tourism contributes to — rather than
undermines — cultural sustainability, and the appropriate policy and management frameworks for its development. This paper seeks to contribute to these debates by providing a comprehensive review of current knowledge, identifying key trends and challenges, and proposing a research and policy agenda for the field. 2. Literature Review. 2.1 Defining Gastronomic Tourism. The terminology surrounding food-related tourism is rich and sometimes inconsistent. Scholars have variously employed the terms food tourism, culinary tourism, gastronomic tourism, and cuisine tourism, often with subtle definitional distinctions (Long, 2004). For the purposes of this study, gastronomic tourism is understood as a form of special interest tourism in which the primary motivation or a significant secondary motivation for travel is the consumption, production, or appreciation of food and drink in ways that reflect local culture and identity (Hall et al., 2003). This definition encompasses a wide range of activities, from visiting Michelin-starred restaurants and attending food festivals to participating in cooking classes, agritourism experiences, and street food tours. What unifies these diverse activities is their shared emphasis on food as a medium for engaging with place, culture, and community — a characteristic that distinguishes gastronomic tourism from mere consumption or necessity-driven eating during travel. 2.2 Theoretical Frameworks. Several theoretical frameworks have been applied to the study of gastronomic tourism. Experience economy theory (Pine & Gilmore, 1999) provides a useful lens for understanding why tourists are increasingly seeking immersive, staged culinary experiences rather than passive consumption. From this perspective, destination managers are effectively curating experiential 'scripts' through which tourists can engage with local food culture. Cultural capital theory (Bourdieu, 1984) has also been applied to gastronomic tourism, highlighting the ways in which food preferences and culinary knowledge serve as markers of social distinction. This perspective draws attention to the role of gastronomic tourism in constructing and reproducing social hierarchies — a dynamic that has implications for the equity and inclusivity of food tourism development. More recently, sustainability frameworks have been applied to gastronomic tourism, emphasizing the potential of food tourism to support circular food economies, reduce food waste, and promote biodiversity through the valorization of traditional crop varieties and heritage breeds (Sims, 2009). These frameworks align gastronomic tourism with broader goals of sustainable development and have gained traction among policymakers and destination managers.
2.3 Global Trends. Several macro-trends are shaping the contemporary landscape of gastronomic tourism. The rise of social media, and food photography in particular, has dramatically amplified the visibility and desirability of culinary destinations, creating new patterns of demand and new forms of culinary celebrity (Mkono, 2012). Platforms such as Instagram and TikTok have transformed restaurant discovery and food experiences into performative social events, with implications for the types of culinary experiences that are developed and marketed. The COVID-19 pandemic, while severely disrupting global tourism, also catalyzed a renewed appreciation for local food systems and culinary heritage. As international travel was curtailed, domestic gastronomic tourism expanded significantly in many markets, fostering a rediscovery of regional cuisines and local food producers. This shift created new opportunities for the development of community-based gastronomic tourism models and for the integration of gastronomic tourism into rural development strategies. 3. Methodology. This study employs a systematic literature review methodology, following the PRISMA guidelines for systematic reviews and meta-analyses (Moher et al., 2009). A comprehensive search of peerreviewed databases — including Scopus, Web of Science, and Google Scholar — was conducted for the period 2000–2023, using search terms including'gastronomic tourism', 'food tourism', 'culinary tourism', 'food and travel', and related combinations. A total of 487 potentially relevant studies were identified through database searches and supplementary hand-searching of key tourism journals. After the application of inclusion and exclusion criteria — including requirements for empirical or theoretical rigor, relevance to the study's research questions, and publication in English — a final corpus of 78 studies was retained for detailed analysis. Thematic analysis was applied to synthesize findings across studies and identify key themes, trends, and gaps in the existing literature. Case study analysis was conducted for five exemplary gastronomic destinations — France, Italy, Japan, Peru, and Spain — selected on the basis of their international recognition as culinary tourism destinations, their geographic and cultural diversity, and the availability of robust data. Secondary data sources including national tourism statistics, destination management organization reports, and UNWTO publications were used to triangulate findings from the literature review. 4. Results and Discussion. 4.1 Economic Impacts. The economic contribution of gastronomic tourism is substantial and multifaceted. In established culinary destinations, food-related spending by tourists can account for up to 40% of total tourist expenditure, significantly exceeding the global average of 25–30% (UNWTO, 2021). Moreover, gastronomic
tourism tends to have strong multiplier effects on local economies, as spending on food is more likely to remain within the local economy when sourced from local producers and processors than expenditure on internationally-branded goods and services. Case study analysis underscores the economic potential of strategic gastronomic tourism development. In Spain, for instance, the regions of the Basque Country and Catalonia have leveraged their culinary reputations — built in part on the global prominence of chefs such as Ferran Adrià and Andoni Luis Aduriz — to attract high-spending gastronomic tourists and generate substantial economic activity in the food and hospitality sectors. Similarly, in Peru, the global success of cuisine centered on biodiversity and indigenous ingredients has transformed Lima into one of South America's leading gastronomic destinations, generating significant employment in the restaurant, agriculture, and hospitality sectors (Matta, 2013). 4.2 Cultural and Heritage Dimensions. Beyond its economic contributions, gastronomic tourism plays a significant role in the preservation and transmission of intangible cultural heritage. Traditional food systems — encompassing knowledge of local ingredients, preparation techniques, seasonal practices, and social rituals surrounding food — are at risk of erosion in the face of global homogenization of food cultures. Gastronomic tourism can provide economic incentives for the preservation of these traditions, creating market demand for traditional products and practices. The recognition of traditional food cultures by international bodies such as UNESCO has further legitimized the heritage value of cuisine and created frameworks for its protection and promotion. The designation of food traditions including the Mediterranean Diet, Mexican cuisine, and French gastronomic meals as UNESCO Intangible Cultural Heritage has generated significant international attention and has been linked to measurable increases in gastronomic tourism flows to the respective regions. However, scholars have also raised concerns about the authenticity and commodification of food culture in the context of tourism. When culinary traditions are packaged and staged for tourist consumption, there is a risk that they become simplified, sanitized, or detached from their living social contexts — a process that Richards (2002) terms 'cultural tourism.' Destination managers face the challenge of presenting food culture in ways that are accessible and appealing to visitors without compromising its integrity or alienating local communities. 4.3 Sustainability Considerations. The relationship between gastronomic tourism and sustainability is complex and context
dependent. On the positive side, food tourism can support sustainable agriculture by creating market incentives for the cultivation of traditional crop varieties and heritage breeds, reducing reliance on imported food products, and strengthening links between tourism and local food production systems. In several case study destinations, gastronomic tourism has been explicitly integrated into rural development strategies, with positive outcomes for smallholder farmers and agri-food entrepreneurs. Conversely, the growth of gastronomic tourism can also generate negative sustainability impacts. The concentration of tourist food demand in specific locales can contribute to over-tourism, place excessive pressure on local food supply chains, and drive up food prices in ways that disadvantage local residents. The environmental footprint of gastronomic tourism — encompassing food miles, waste generation, and water use — also requires careful management if food tourism is to contribute to rather than undermine sustainability goals. 5. Conclusions and Recommendations. This study has demonstrated that gastronomic tourism represents a significant and growing sector within the global tourism economy, with substantial potential for economic development, cultural heritage preservation, and sustainable tourism management. The case studies reviewed illustrate the diverse pathways through which destinations have leveraged their culinary identities to attract tourists, generate employment, and stimulate local food economies. At the same time, the study highlights the importance of thoughtful and inclusive approaches to gastronomic tourism development. Destinations that have achieved long-term success in food tourism tend to be those that have developed clear strategic frameworks, invested in the quality and authenticity of culinary experiences, engaged local communities and producers as stakeholders, and managed the tensions between tourism growth and cultural sustainability. Based on the findings of this review, the following recommendations are offered for destination managers and policymakers. First, gastronomic tourism strategies should be developed within the framework of broader sustainable tourism plans, with explicit attention to the linkages between tourism, local food systems, and cultural heritage. Second, investments in the skills and capacity of local food producers and hospitality professionals are essential for maintaining the quality and distinctiveness of gastronomic tourism offerings. Third, monitoring and evaluation frameworks should be established to assess the economic, cultural, and environmental impacts of gastronomic tourism over time, enabling adaptive management in response to emerging challenges.
Future research should extend the analysis of gastronomic tourism to understudied regions and destination types, including emerging markets in Central Asia, Africa, and Southeast Asia, where significant culinary heritage resources remain largely untapped for tourism purposes. Longitudinal studies examining the impacts of gastronomic tourism development over time would also contribute significantly to the evidence base for policy and practice. Acknowledgments.
